That should probably work, and it is also beneficial for users wishing
to print or make greyscale copies. The main thing, then, would be to
ensure that the contrast is sufficient. As I understand it, any colours
should be distinguishable to the colourblind as long as their
luminescence varies (i.e. they convert to different shades of grey),
but don't quote me on that.
In case you do wish to use colourblind-accessible colours, you might
find the following site useful to simulate different conditions:

It also has a feature to create accessible colour schemes. The Checky
extension for Mozilla Firefox provides convenient context-menu access
to examine any page or image viewed in Firefox using this filter (and
others).
