How do you think about using AWStats?
http://awstats.sourceforge.net/
We had it installed during a project (it was not to difficult). This
makes all the statistic work and also produces graphics according to
the data it gathered.
Concerning the rating of a certain document I would suggest to add a
line at the bottom of each page containing the following:
"How would you rate this document" <Pull-Down-Menu from 0 (not good) -
10 (very good)
To get more detailed information, it might be usefull to do a survey
along the visitors, in which the may participate.
